How it is grown

Slow by design.

Our vanilla is grown on smallholder plots around Fort Portal, in the western foothills of the Rwenzori range. Vines are hand-pollinated over a short window each season, and the pods are left on the vine until they reach full maturity. Nothing is forced.

After picking, the beans are killed in hot water, then sun-dried by day and sweated by night for several weeks. The slow alternation is what develops vanillin and drives the moisture down without making the pod brittle.

Conditioning follows in closed boxes for a further 5 to 6 months. It is the most expensive part of the process in time, and the reason our beans stay supple and aromatic through a long shipping cycle.
